  3. For a subtle garlic kick, peel and slice the garlic thinly. Add it to the bowl, then pour a generous amount of extra virgin olive oil over the top. Toss everything together so the tomatoes are nicely coated.
  4. Taste and adjust the seasoning as needed. Let the salad rest for about 20 minutes to allow the flavors to meld together. Just before serving, discard the garlic slices (unless you want a more pronounced garlic flavor, in which case, leave them in!).

In Rome, we’re lucky to have access to some incredible tomatoes, and while you can make this insalata di pomodori with just about any variety, we prefer big, meaty tomatoes such as pomodori da insalata (salad tomatoes), or beefsteak tomatoes (called cuore di bue in Italian).

Their thick flesh makes for a satisfying bite, and their slightly sweet, tangy taste elevates this Italian simple dish to a whole new level.
